During my vacation in Okinawa, I visited Ufuya, one of the most intriguing restaurants I have ever been to. Ufuya is in the middle of nowhere as it does require quite a drive to get to, but the huge parking lot and the restaurant itself is always full of cars and tour buses.

Taiwan ramen was created by a Taiwanese Chef who had a shop in the Chikusa district of Nagoya (Aichi Prefecture) in the 1970s. As a Chinese cuisine chef, he took the concept of the Tantanmen, a type of Chinese spicy noodles, and added his own spin to the formula.
